I don’t think I could ever really become a vegetarian, but I’ve discovered that if the vegetarian meal is tasty enough, I don’t miss the meat at all. For health and environmental reasons, we’ve been experimenting with and trying to commit to one fully vegetarian meal per week. I’ve found many tasty inspirations through the healthy living blogs that I frequent.
But tonight’s dinner is a pure Sauce Concoction, borne of a fridge full to the seams with a wide variety of vegetables and my inability to limit myself to just a few of them.
The result was the Whatever’s-In-Your-Fridge Vegetarian Chili:
Yes, I made a giant, GIANT pot of it. Yes, we’ll be eating chili for a few days to come.
The roster of vegetables and other plant-based ingredients featured in it:
- diced firm tofu
- kidney beans
- zucchini (from my mom’s garden!)
- broccoli stalks (great way to use them up!)
- green and red bell pepper
- canned diced tomatoes
Didn’t miss the meat at all.
